Last week my sister asked for my help for a bake off she was having among all the staff members at the school she teaches at. I wanted to make something festive so we decided on white chocolate peppermint cupcakes. The cupcakes were delicious and fluffy. We drizzled them with melted white chocolate & sprinkled them with peppermint flakes.
Ingredients:
-Makes 24 cupcakes-
1 box of yellow cake mix
1/2 tbsp peppermint extract
4 ounces white chocolate (finely chopped)
For topping:
2 containers of butter cream frosting
2-3 candy canes {crushed}
1 ounce melted white chocolate
Directions:
1. Preheat oven to 350 degrees.
2. Combine your ingredients for the batter and add the peppermint extract.
Mix together on medium speed.
3. Once the batter is smooth, pour in your white chocolate and
fold them into the batter with a spoon.
4. Bake for 20-25 minutes.
Topping: Frost cupcakes, then sprinkle peppermint flakes on top. In a bowl, melt the white chocolate. Pour the melted chocolate into a ziploc bag, then cut a small hole in the bottom corner and drizzle over cupcakes.
