Pad thai is definitely one of my FAVORITE thai dishes. I really love the flavors and decided it was time to try to make it! I found this recipe and added/took out a few ingredients. I thought it came out really good! I had to use lo mein noodles though because I couldn’t find rice noodles anywhere! The lo mein noodles surprisingly went well with it but it’s a must that I find rice noodles for the next time I cook this..which is going to be very soon!
What you need:
2 thin skinless boneless chicken breasts
8 oz. thai rice noodles
4 cloves garlic, minced
3 sprig green onions, sliced
1/2 cup fresh cilantro
1/3 cup roughly chopped peanuts
1/4 cup chicken stock
Vegetable oil for stir frying
2-3 eggs
Lime wedges
The sauce:
3 tbsp brown sugar
1-3 tbsp chili sauce
2 tbsp fish sauce
3/4 tbsp tamarind paste dissolved in 1/4 cup of warm water
Directions:
1. Bring a large pot of water to a boil and then remove from heat. Add your rice noodles. Allow them to soak while you prepare the rest of the meal. You will be frying these noodles later so you don’t want to over-soften them. When they feel soft enough to eat but still a little hard, drain and rinse with cold water. Set aside.
2. Make your pad thai sauce in a bowl, combining all of your sauce ingredients. Make sure to mix them well and set that aside.
3. Warm up a frying pan over medium heat. Add 1-2 tbsp oil and toss in your garlic (stir until fragrant-about 30 seconds)
4. Slice your chicken and toss them into to your frying pan (with the garlic) – stir fry about 30 seconds to a minute. Adding 1-2 tbsp of chicken stock when pan becomes a bit dry. Continue stir frying until chicken is cooked.(5-8 minutes)
5. Whisk two eggs together in a bowl and pour them into your pan to cook. (1-2 minutes)
6. Add your rice noodles and pour your pad thai sauce over. Using a big spoon or spatula, toss the noodles gently to prevent breaking them. Stir fry this way for 1-3 minutes. If pan becomes dry add some oil but don’t add more chicken stock from this point.
7. Make sure your noodles are done and the taste is how you like it, you can add more fish sauce for extra flavor.
8. Plate your pad thai noodles, adding ground peanuts and green onions on top and a lime wedge on the side. The lime tastes really good squeezed on top! Enjoy ๐
