TGIF!I’m beyond happy it’s friday but also happy because one of my favorite girls, Magan, is doing a Foodie Friday link up on her blog A Touch Of Class and I’m too excited to be participating in it! I stumbled across this amazing recipe (Shape.com) and was literally speechless for a second because it is such an amazing idea! Plus… you don’t have to feel that guilty about it (hello..the cheesecake is inside of a fruit!) Unless of course you eat them all. Maaaybe then. But, they look so delicious! I’ll be making them this weekend and plan on adding some melted chocolate on the outside of them… Yum.
What you need:
24 large strawberries
4 oz light cream cheese
4 tbsp confectioner’s sugar
1/2 tbsp vanilla extract
{Serves 6}
Directions:
Slice off the stem end from each strawberry and make a hole in the center by scooping out a bit of the berry with the tip of a paring knife. Set aside.
In a small bowl, combine cream cheese, confectioner’s sugar and vanilla. Mix until well blended. Using a small spoon or knife, spoon cream cheese mixture into the center of each strawberry, allowing some filling to dollop on top.
If you want to get fancy.. garnish with mint leaves before serving!
