I cooked this meal the other night and it tasted amazing. I’ve always been a fan of chicken teriyaki but decided I wanted it to give it a little kick this time. So I added some sweet chili sauce and it was a great combo in my opinion! I also added red bell peppers and served it with a side of brown rice.
{Serves 2}
What you need:
2 thin boneless skinless chicken breasts
3/4 chopped Red bell pepper
1 tbsp cilantro {fresh or dry}
1 tbsp oregano {fresh or dry}
1/4 cup Brown rice..or white if you prefer
1/3 cup teriyaki sauce/marinade
2 tbsp of sweet chili sauce
2 tbsp of soy sauce
Olive oil
The steps:
1. Cut your chicken breasts into strips as well as your bell pepper.
2. Saute chicken in olive oil until it’s cooked on the outside (you will throw the chicken back in later when you are preparing your sauce)
3. In a mixing bowl, combine teriyaki sauce, sweet chili sauce, and soy sauce.
4. Saute your bell pepper in olive oil and toss in your half-cooked chicken pieces. Add your sauce and let the chicken, bell pepper and sauce simmer on low for about 10 minutes)
5. Once your chicken is cooked through, add your spices.
6. Serve with a side of white or brown rice!
