My absolute favorite restaurant in Miami is an Asian restaurant called Sea Siam. I order the volcano chicken there and it’s amazing. This recipe is my take on that dish. It’s pretty close to it and one of my favorite meals to cook!
What you need:
3 chicken breasts
Olive oil
{Mild} Sweet chili sauce (Taste of Asia; you can find this in the international food aisle in most grocery stores)
Basil (Fresh or dried)
1/2 Red bell pepper
1/2 Green bell pepper
3/4 cup of brown or white rice
{Makes 2-3 servings}
Steps:
Chop your red and green peppers into long thin strips. Cut your chicken breasts into small pieces. Saute the peppers with olive oil on low. In a separate pan, Saute the chicken in olive oil until it’s about 90% done and toss them in with the peppers to finish cooking. Pour in half the bottle of the sweet chili sauce in with the peppers and chicken. Toss in your fresh or dried basil leaves and stir those in. Simmer on low for about 15 minutes.
Serve with rice and enjoy!
