I made chicken parmigiana the other night for dinner using home-made tomato sauce. I don’t like to use ready made sauces that come in the jar because they seem boring to me. I feel like the home-made sauce has more flavor from the fresh ingredients so I prefer to make my own! It truly is so delicious and is definitely not as hard as it may sound. You can also use this sauce recipe for spaghetti or anything else that requires tomato sauce.
What you need to make the sauce:
2 cans of chopped tomatoes (plain, without seasonings)
Salt/pepper
2 freshly minced garlic cloves
1 tbs of sugar
Dried basil
Dried oregano
Other ingredients:
Chicken breasts
Italian bread crumbs
2 eggs
Shredded mozzarella cheese
Shredded parmesan cheese
What to do:
First you want to bread your chicken, dip your chicken in egg and then coat it completely with italian bread crumbs. Place your chicken in a skillet with some olive oil and cook it on medium heat until outside is cooked thoroughly(you don’t want to cook it all the way because its going to be baked too). Remove your chicken and place it in a baking dish. Put both mozzarella and parmesan cheese on top of your chicken (it should melt onto it because it will be hot). Preheat your oven to 300 degrees. In a large pan pour in your two cans on tomatoes and throw in all your ingredients for the sauce. Let it simmer for about 20 minutes. Pour the sauce in the baking dish on top of your chicken. For the finishing touches, put as much cheese as you’d like on top. Bake for 20-25 minutes. I suggest serving it with garlic bread or a side of spaghetti!
